Recipe 006 – Frickadillies

So this week we’re doing a fun recipe that my great-grandmother used to make. Yes, it’s that classic food with the silly name; frickadillies! They are similar to, but different from, a popular European dish, and are really just wonderful when made right.

You will need:

1 1/2 pounds ground beef
2 eggs
2 slices of bread – cubed
1 teaspoon salt
1 cup milk
1 can cream mushroom soup
1/2 can water
1/2 cup flour
2 mixing bowls
1 9 x 13 baking pan

Recipe 005 – Pot Roast

So let’s say you just found out that tomorrow you need to make a delicious dinner that serves six people and, oh, you’ve got work tomorrow, so how will you have time for this?

Don’t worry. I’m here.

Yes, it’s time to make a pot roast, and man, you’ll be surprised at how easy this is!

You will need:

Beef. Boneless, choice, chuck roast is what I picked up when it was on sale.

Potatoes. As many as you like!

Two carrots

Green beans

Corn

Onion

Bay leaves

A crock pot

Recipe 004 – Deviled Eggs and Bacon-Wrapped Chicken

You say have a party about to happen, and you don’t know what to make for it. Don’t worry; I gotcha.

There are two party dishes which, if you make them right, everyone will love, and thankfully they’re very easy to make! So it is that today we’re going to learn  how ot make deviled eggs and bacon-wrapped chicken!

You will need:

Deviled eggs:

Eggs. How many depends on how many people you want to serve. Assume about two eggs per person, and round up to the nearest half-dozen.

Mayonnaise

Mustard (standard yellow or Dijon)

Salt

Pepper

Dill weed

Paprika

A hand mixer

Bacon-wrapped chicken:

Boneless, skinless chicken breasts. Approximately one for every three or four people.

Bacon. One 16oz package for every ten people.

One can of Tony Chachere’s Creole Seasoning

1 pound of brown sugar

Toothpicks

Baking sheet

Cooling rack

Aluminum foil

Yep, it’s time for that old Easter classic, ham! It’s so incredibly easy to make. How easy? Well, it’s easy enough that I’m going out of my way to make it slightly more difficult than it has to be!

You will need:

1 ham

Some aluminum foil

Cooking spray

A baking dish

The ability to resist rolling your eyes at how easy it is to bake a ham

Recipe 002 – Taco Meat

So it’s Tuesday. You know what that means. Tacos!

Taco meat is very easy to make, surprisingly cheap, and can feed lots of people. it also freezes and refrigerates well. Plus it’s very tasty!

You will need:

3 pounds of ground beef (80/20 for preference)

2 cups of water

1 tablespoon of cumin

1 tablespoon of paprika

1 tablespoon of chopped, dried onions

1 tablespoon of chili powder

1 tablespoon of cayenne pepper

1 tablespoon of garlic

1 skillet

Lessons for Jasmine – 001 – Fried Chicken

Jasmine is a friend of mine who a year ago didn’t really know how to cook. In that time, I’ve taught her how to make shepherd’s pie, a pavlova, homemade fries, hamburgers, and a number of other things.

Tonight, I’m teaching her how to make fried chicken, and you can play along at home!

You will need:

1 Chicken

2 large eggs

1 quart of buttermilk

Four cups of flour

Paprika, garlic, salt, pepper, and poultry seasoning

Shortening

A cast iron skillet (or an electric skillet)

Tongs

A meat thermometer

A cutting board

A chef’s knife

Recipe 001 – Homemade French Fries

Homemade French fries are, as the kids say, the bomb-diggity, yo. They’re very simple and very easy to make, and quite rewarding to eat. They’re something that seem like they would be complicated, but as you’re about to learn, they are not.

You will need:

2 – 3 medium-sized potatoes per person

A deep fryer

Cooking oil

A sharp knife

A cutting board

A peeler

A mixing bowl

Paper towels

Total prep time: approximately 10 minutes, plus soaking time

Total cook time: approximately 10 – 15 minutes
