Experiment 001 – Chicken and Rice Soup with Peppers

Now you get to join me on a little adventure. Yes, I’m about to try cooking something I’ve never cooked before! I figure some of you will be cooking things for the first time, so I’m going to do the same. Better yet, I’m going to cook something without a recipe! Yep, I’m making it up as I go along! Say hello to my chicken and rice soup with peppers!

You will need:

1 package of chicken breasts (about four breasts total)

3 bell peppers (I used one each of green, red, and yellow)

1 jalapeno pepper (I can’t make the ~ over the n)

16 ounces of drained, diced tomatoes

2 cups of rice

2 boxes of chicken broth

3 tablespoons of crushed red peppers

3 tablespoons of salt

3 tablespoons of dried onions

Total prep time: about 45 minutes

Total cook time: about one hour
